After graduating from the Culinary Institute of America, Co-founder Aaron Rochino clocked time at legendary establishments like Le Bernadin in New York, two Stephen Starr restaurants in Philadelphia, Oliveto in Oakland, and finally at Chez Panisse as a chef in 2007 (they are now a Chez Panisse purveyor). His co-founder wife Monica met him at Oliveto and with an economics degree from Brown in hand, provided the synergy needed to successfully open The Local Butcher Shop in 2011.
The Local Butcher buys whole animals instead of parts which means that they can provide custom cuts for their wholesale and retail customers.
